What's in a name?

Aloha,

Today, I would like to talk about Video DJメs of Hawaiiメs entertainment side of the company. My previous emails and blogs have focused more on our Wedding Reception and Event Planning. Cook once and eat all week with our Roasting Pan with Rack

Do you just pull out your Roasting Pan for the holidays? Imagine the time you'll save -- the meat is cooked, the recipes are planned and on busy nights you just tie it together. Here's how:

Trio of Roasted Meats
1 whole chicken 3-4 pounds
1 boneless pork roast 3-4 pounds
1 boneless beef roast 3-4 pounds
olive oil
salt and ground black pepper to taste

Preheat oven to 350 degrees. Remove and discard giblets and neck from chicken cavity. Rinse chicken with cold water; pat dry with paper towels. Tie ends of legs together with cotton string. Lift wing tips up toward neck; then tuck under back of chicken. Place chicken crosswise, breast side up, on center of Rack in Roasting Pan.

Place pork and beef roasts on either side of chicken. Brush with olive oil using a pastry brush. Season with salt and black pepper. Bake 1 hour, 45 mins. to 2 hours. All three roasts, when close in weight, will reach the appropriate temperature and be done at the same time.
Chicken: 180 degrees in the thickest part of the thigh and juices run clear.
Pork: 160 for medium
Beef: 145 degrees for medium rare

Remove Roasting Pan from oven; let meats stand 10 mins. before carving. Remove meats from pan using Meat Lifters. Prepare gravy:

Pan drippings
3-4 cups chicken or beef broth
1/2 cup all purpose flour

Pour drippings into large measuring cup (4 cup capacity) and remove 1/4 cup fat from drippings; return this fat to Roasting Pan. Discard remaining fat from drippings. Add chicken or beef broth to drippings in measuring cup to measure 4 cups of liquid.

Position Roasting Pan over front and back burners of cooktop. Whisk flour into fat using nylon whisk until smooth. Gradually add drippings, whisking until smooth. Cook over medium heat, stirring constantly, until gravy comes to a boil. Cook 2-4 mins. or until thickened. Season with salt & pepper to taste. Carefully pour gravy into serving bowl.

Gravey can be frozen after it cools. Freeze it separately from teh meat to prevent meat from getting too soft during thawing. Place gravy in an air tight freezer container, and it can be frozen 3 to 6 months. When ready to use, thaw overnight in the refrigerator. The gravy will go well with all three meats.

Keeping Fresh Ideas

I made a commitment to myself to always schedule to attend at least one workshop a year to keep fresh with ideas and to provide only the best wedding photography for my brides. So when I received an opportunity to attend a 5-day workshop with Joe Buissink, who in my opinion, is probably one of the top photographers in the U.S.. I jumped at the opportunity. After all, he did Cristina Applegate's wedding and Martin Sheen's daughter's wedding. I am pretty excited what I will walk away with from the workshop and the new compositions I will be inspired to create with my images. In many ways, I love to apply my artistic background into my photography and look for new ways of presenting my images, sort of the way many of the famous artists have done in the past. Monet, Manet, Cezanne, and the other impressionist took painting to a new dimension. I look at the cameras and lens not as trade tools but as artistic tools. And I hope that this workshop will help me continue to provide fresh new artistic images and take my photography to a new dimension that is differently pleasent for the brides.

Stoneware - why?

I didn't discover stoneware until 5 years ago, when I began my business as a Pampered Chef consultant. Let me save you the heartache of overdone edges and underdone middles on your brownies and lasagna; cookies that look done on top but are burnt on the bottom; and biscuits that could double as hockey pucks!

Family Heritage Stoneware from The Pampered Chef is fired at temperatures over 2000 (yes, 2000) degrees farenheit which makes the stone safe to use with any food. Many of the pizza or baking stones you find at discount retailers cannot be used to make high fat foods such as cookies, crescent rolls, biscuits, etc. So, what I share with you here applies ONLY to Pampered Chef stoneware. Do not use these tips with other stones you might have. Refer to your manufacturers' guidelines.

Because stones absorb and retain heat evenly from the beginning of the cook time, the result is more evenly baked foods. Stoneware produces crisp crusts with less risk of burning, baked goods with moist interiors, and juicy, flavorful meats.

While the oven should be pre-heated before baking foods, never pre-heat a Pampered Chef stone empty as it may cause the stone to crack or break. Another "threat" to your stone is use over a direct heat source or flame or under the broiler.

Pampered Chef stones do not require seasoning before use. It is recommended that for the first few uses, you bake high fat items such as dinner rolls or crescent rolls or a batch of cookies on the stone. Alternatively, you can give the stone a light coat of cooking oil (vegetable, olive, canola - whatever you use) by drizzling it on then brushing with a pastry brush or spread it around with a paper towel. NEVER use non-stick cooking sprays. The aerosols in the spray leave the surface of a stone tacky after cooking and you'll have ruined the non-stick property of the stone. You only need to oil the stone lightly the first 3 or 4 times you use it. After that, just place the food on the stone and put it in your pre-heated oven.

Frozen, pre-cooked foods such as pizza, chicken nuggets, french fries, fish sticks, etc. can be placed directly on the stone - no thawing necessary and no turning required during cooking! Thick dense frozen foods such as chicken pieces, fish fillets or pork chops should be thawed completely before baking.

Use the same baking times and temperatures with stones as you would with other bakeware. Foods that require a short baking time (10 mins or less) may need an extra 1 to 2 minutes.

Stones are microwave safe and can be used in a convection over as well.

Stones become extremely hot in the oven and stay hot for a longer period of time than other bakeware. This is great when you're going back for the second slice of pizza as the stone has kept it hot, but do use caution around the stone.

Foods may be cut and served directly from stones. Knives or other metal edges will not harm the surface.

Cleaning stones is easy. Once the stone has cooled completely, rinse under hot running water and scrape off any excess food using the nylon pan scraper (supplied with our stones) or kitchen brush. Never use soap! If necessary, to freshen your stone, make a paste of 1 tablespoon of baking soda and warm water, the use this to wash the stone with a white wash cloth or kitchen brush.

My favorite, all purpose stone is my Stoneware Bar Pan - essentially sized like a jelly roll pan (10" x 15 1/2") with a 1 inch high edge the whole way around. It's perfect as a cookie sheet, but because it has sides, I can also use it for brownies and bar cookies. I can also use it to create one-dish meals such as chicken breasts and roasted veggies or for pizza. It's also perfect for "baking" pancakes with no flipping or turning needed (yes, in the oven, at 350 degrees for about 20 mins - everyone has a hot, square pancake after cutting at the same time) and bacon (no more messy cooktops and walls for me to clean after making bacon on the cooktop).

I can share tons of ideas with you on how best to choose the right size piece of stoneware and simple to make, looks like you fussed recipes.

Notice, I didn't say metal baking sheet. Stoneware will give you incomparable results - anything you would make in a metal or glass cooking vessel can be made in the similar stoneware piece. But, more on stones in another blog!

What's the difference anyway?

Thanks again for dropping by to read my ramblings. To those of you that haven't chosen your entertainment company for your reception, I urge you to do so sooner than later. Dates fill up quickly as the most popular dates are taken up to a year in advance. I have brides calling me for November and December 2007 dates already. Please invest early to make sure your company is available for your special occasion.

Ok, enough about that. As the topic of my blog today states: What's the difference anyway? I will share with you a few things that differentiate my company from others. When I ask brides and grooms why they chose Video DJ's of Hawaii as their entertainment company, their responses are usually pretty similar. They mention my professionalism, reputation, sincerity, and candidness. That being said, I will give you a few more reasons.

ユ You will not see me drink alcohol at your event. (There is no excuse for an intoxicated DJ at your event.)

ユ You will not see a big or small banner advertising my company at an elegant and classy wedding reception. (Imagine if your photographer, cake baker, caterer, etc all had banners advertising their services.)

ユ You will not see me in jeans and a T-shirt at your event. (Itメs formal or semi-formal attire per your request. Elegant and classy; not ghetto fabulous.)

ユ I would have to be on my deathbed to not perform at your event. (Although I would never rule it out, I have yet to miss an event due to illness or any other reason.)

How to book live musicians

Tips for choosing the right entertainment for your wedding



1) Band or DJ?
Many couples have trouble deciding whether to have live music or a DJ for their reception. While bands are generally more expensive, live music is often perceived as being more sophisticated or upscale than DJ services. On the other hand, most young adults these days are very familiar with and have grown up
in a DJ culture. If price is the main issue, then DJ services are definitely the right choice. A great band with DJ services on the break is the ideal compromise. Both bands and DJs can be broken down into subcategories.

Types of Bands:
General business- This is by far the most versatile kind of band for a wedding or function. A good モGBヤ band can convincingly play several styles of music. For example, most weddings in Boston and New England call for a dinner set. Some nice jazz and swing is often called for during this period. After the dinner is over and perfunctory announcements have been made, the band is ready to launch into a dance set. This will typically consist of a combination of Motown, classic rock and Top 40, and maybe even some current contemporary hits. Also included may be an ethnic favorite or two, if requested. Reading the crowd is the duty of the bandleader, and this a very important ingredient in any band. A good bandleader knows when to speed it up, what song will work well in a given situation, and when to bring things down a bit for the benefit of the guests or bridal party.

Jazz and Swing- Some functions call for a low-key approach to musical entertainment. A モcocktail receptionヤ may require a jazz combo, usually consisting of a three to five piece instrumental group, with or without an accompanying vocalist. These quieter, mostly acoustic groups provide a sophisticated and elegant atmosphere with an urban feel. Combined with a vocalist, these groups will play songs from The Great American Songbook, i.e. standards, showtunes, Frank Sinatra favorites, etc. If a quality acoustic piano, such as a baby grand, is available ( and in tune), the pianist will use it, and the bass player will play an upright bass. A drummer and one or two horns such as sax or trumpet will complete the group.

Big Band or Swing Orchestra- This is a larger and louder version of the band just mentioned. These bands are for clients who want to hear authentic renditions of big band classics from the swing era. Their repertoire consists of music by The Benny Goodman Orchestra, Duke Ellington, Tommy Dorsey, Count Basie, and many others. With twelve to twenty band members with a large horn section, these bands are more appropriate for larger functions.

Ethnic- For every ethnic group, there is a band! Some weddings or functions call for music representative of a particular geographical or cultural area. For example, many Jewish functions call for a klezmer group. A steel drum or reggae band would be appropriate for a Caribbean wedding. Also available are mariachi, Italian bands, Celtic bands and harpists, German モoompahヤ bands, Dixieland or Cajun bands for a New Orleans flair, and many, many others




2) How much ?
DJs start around $750 for a four hour period for a Saturday wedding between the months of April and November. High energy teams of DJs that offer many extras and promote guest participation can cost as much as $2500.
Bands start around $1000 for a four piece swing quartet and can go as high as $7500 for a few of the areaメs best known wedding bands. Average pricing for a great band that can play モa little of everythingヤ is between $2500 and $5000.

3) When should we book our entertainment?
Once youメre engaged, you should immediately look for entertainment. Some couples book the reception site and photographer, but put their entertainment on the backburner. Good bands book 8 months to a year and a half in advance. DJs usually book up 6 months to a year in advance.

4) Where do we find a Band or DJ?
Word of mouth is still a great way to start. Ask your friends what Band or DJ they used. Most couples will be glad to share their experiences with you. And of course, look in wedding periodicals for a local vendor. An internet search can be helpful also, although sorting through the vast amount of options can be intimidating. We try to take the guesswork out of this process for you. The bands and DJs we work with have been carefully screened, and have performed well for us over the years.

5) How do I know my entertainers will show up?
This is probably the most-asked question we hear. Ask your entertainment agent to supply references for any specific band or DJ. Agencies spend many years screening the Bands and DJs they use, thereby saving you that trouble. Make sure your agency is bonded and licensed by the State Dept. of Public Safety.

Hints For Getting Great Photos On Your Wedding Day

In the past 18 years that I have been in business and hundreds of wedding later, I've made some simple observations on how to get great photos during your wedding. I hope these simple tips will help you on your wedding day.

Allow enough time for the photographer to get the pictures that will be memorable for you. I've been in many weddings where the time was so limited for the picture taking, some of the more creative shots had to be passed in order to get the basic, must have ones. Ask your photographer how much time is needed and work out a plan that you like.

If you are having an outdoor ceremony & picture taking, you should have a backup, indoor site, in case of bad weather. Living in Hawaii, you never really know what the weather is going to be like.

I have seen wedding couples try to take care of too many things on their wedding day and are stressed out by it. Your facial expressions may reflect some of this stress. The key is to delegate the responsibilities to others and enjoy your wedding day, stress free.

Proper planning with your photographer to go over what you like, different styles available, and the pictures you must have will eliminate surprises when you receive your photos.

Working with your photographer prior to your wedding is a great idea and highly recommended. I love to work with the couples photographing their engagement portraits. This will make the couple & photographer feel more comfortable on the wedding day. I always observe the interaction between the couple and decide on what type of posing and directions I will suggest to them.

Aloha and thank you for reading my ramblings. Happy Valentine's Day to you and yours. Today's blog will address the emails I receive prior to meeting brides and grooms for the first time.

So here we go... My name is Dale (Takashi) Kikuyama-Hoxie and I am the owner of Video DJ's of Hawaii. I started my company for this simple reason: I've attended several events where I believed the entertainment portion of the reception or party was substandard. I believe in my heart of hearts that each reception deserves the "vendors" undivided attention and 100% effort to ensure a successful event.

My qualifications include 100's of successful events, both with my company and a few other companies that I have worked with. Iメve worked at several nightclubs and radio stations over the past 14 years, and prior to starting and running my company full-time, I served as a Refractometrist within the field of ophthalmology. Here is where I learned what "attention to detail" really meant. In medicine, like your reception, there are no "do-overs". My public speaking skills were taught to me by the Department of Defense. The Wedding DJ vs. The Full Service Wedding Reception Professional

As a wedding professional, you can rest assured that I can (calmly) handle many of the bridal emergencies most wedding DJ's have seen. New for 2006

We had a great 2005. A couple changes for 2006, we have switched to Mac in stead of P.C. The P.C. was great but the OS system for the Mac is a little more stable. Also we have added intelligent lighting to the wedding packages. We look forward to a great 2006.
