Breakfast for Dinner
Not sure if it's something trendy, but I seem to have a lot of requests for breakfast for dinner. I like eggs anytime of the day, especially with fresh basil and parmesean cheese, scrambled with just a little bit of black pepper. Some people like waffles with whipped cream and fresh ripened strawberries, and some like something a little more dense, like ham and pasteries, whatever you prefer, we are up for making a little breakfast when the sun goes down.

Why choose a Professional Photographer?????
MOST ASKED QUESTION
A LOT OF BRIDES ASK.....WHY SHOULD I HIRE A PROFESSIONAL PHOTOGRAPHER?
While I think there are many reasons, I will give you one example of what happened to one of our clients. Amy and Steve had met us at the bridal fair and were overwhelmed with the choices and especially the prices for photography. We chatted with them about their budget and what pictures were the most important to them. They were having a big wedding because they had to invite their entire church plus the usual family and friends. So the cost of feeding everyone was a big concern. And it dominated their budgeting!!!! They were sure they would have to settle on a friend to take the photos! Since we have been doing this for 25 plus years, we suggested that they compromise a little and hire us to do Formal Family photos only. Then it might help the budget if they served Coffee and desserts at the church hall instead of a full dinner, then follow that a few hours later with a more intimate sit-down or buffet dinner for the closer members of the family. That way the Church members are not offended, and the family gets to share a more intimate experience with the bride and groom. After the wedding, Amy and her Mom were so pleased with how things went, they ordered extra wallets to send in their Thank You cards. Amy told me that was a huge hit with her guests......they all felt like they got a gift as well.

Free crab cakes for the crew of Starbucks
Your work is phenomenal! I will use you the next time I need a caterer.
Starbucks manager Federal Way Starbucks
The crew got a big surprise today at Starbucks in Federal Way. They all got crab cakes the size if hands served fresh and hot for lunch. The Starbucks across the street from The Commons mall is where I do a lot of taste testing for brides and grooms to be. The last time I had a tasting, one of the baristas asked playfully, Next time bring us some crab cakes. So when I came in today to do the tasting for a wedding at the Thornwood Castle in Lakewood, the same barista said jokingly, Where are the crab cakes? I opened the container and everyone cheered. It was a good day.

Managing a Reception Menu
So, here are some thoughts after being a guest (not the coordinator) at an event; I love food. I mean, who doesnt enjoy a wonderfully presented, delightfully flavorful spread? In fact, the cuisine at a wedding, or any celebration can make or break the mood.
That said, here are some of the, often-overlooked, things to keep in mind:
1) Its OK to request adjustments to recipes, including seasoning. An example being, fresh mixed greens can be overpowered by too much garlic (or vinegar) in the dressing. Be sure you check small details at the tasting. An overdressed side dish can ruin your palette for the rest of the meal
2) If you are kind & generous to the servers, theyre more likely to pass that attitude on to your guests
3) Sometimes a poor cut of meat gets disguised with too much sauce. Be sure that the cut & seasoning that you sample (and approve) are what you actually get at your event.
4) Its better to have a few selections of higher taste and quality, than a bunch of selections that are bland & ordinary.
5) Lastly, order what you like. Of course, you want to keep your guests in mind, within reason. That doesnt mean you have to have the fail-safe pasta bar, when youre just dying for Thai food. Even with Thai, a good marinated chicken (not too spicy), will work for everyone.
Oh, and I always like to strongly urge the Bride & Groom to get through their plate of food, all the way through, once they sit down. This way, they enjoy the meal that they carefully selected, fuel-up for the party ahead, and keep the schedule of events on track for everyone involved.

BUDGETING FOR YOUR WEDDING DAY WITH HAWAII WEDDINGS AND EVENTS
More often than not, I've found that clients haven't sat down to talk about their wedding budget.
The first thing I ask my clients is what their budget is. By defining their budget, we can define the most appropriate venue(s) selections as well as vendors, decor, etc.
Prior to starting any event planning, we always want to have a clear understanding of the goals and the budget involved so that everyone is on the same page. We will also provide constructive feedback on what can (or can't work) based on time constraints or budget.
Our years of experience and connections within the industry allows us to streamline the planning process as we can weed out the areas that are not going to work for you. For example, if you have a $2,000 flower budget, why would you spend the time meeting with a florist who has a $3,500 minimum order requirement? We pride ourselves in helping you achieve a beautiful wedding and we will offer recommendations on cost savings along the ways so you can get more for your valued dollar.
The most important aspect of your wedding is the celebration of life, love, family and friends.
Should you need assistance with preparing your budget, please check out our new consulting/budget package called "We're Engaged....now what?""
