I think it's best to go with some of the "oldy or Old School" singers so you don't look back and wonder why you chose a one-hit-wonder. Some of my slow favorites are:
-Perhaps Love by John Denver & Placido Domingo (An odd combo but very beautiful)
-Until by Sting
-The Very Thought Of You by Billie Holiday
-At Last by Etta James
-The Way You Look Tonight by Frank Sinatra
-Unforgettable by Natalie and Nat King Cole

A nice music tradition we have in my family is that the first father-daughter dance is always to the first song he danced to at his wedding.
Have you ever seen the episode of Everybody Loves Raymond when Robert and Amy get married? That is one of my all time favorite ideas. I'm not sure of the exact song but it started out slow then turned into a fast dance number. It was too cute!
I'm not sure where you are but you could also step outside of your normal realm. Use a reggae song or a traditional cultural song from your heritage.
Obviously, the bigger the music library that a contractor has, the better that they can satisfy your request. We currently maintain a library of just under a thousand tunes, and many other can be obtained on short notice as well, This is roughly analogous to the DJ purchasing that unique CD with your song on it.
However, a request for "your song" often is looking for something the DJ or musical group has not had to deliver in the past. There's a lot of music that's been made, and there's more coming out every months; it would be an impossible task for any one firm to keep abreast of it all.
The best way to avoid ending up disappointed is to give your musical contractor as much advanced notice as possible, the better for them to prepare to "do it right".
I have a custom arrangement policy that allows any client to select one tune of their liking and have that prepared for their event, free of any additional charge. That allows for the "special requests" that sometimes come out of left field. The only stipulations that I make is that a "lead sheet" (printed sheet music for piano and vocalist be given to me not later than six weeks before the event.
Once I have the piano part in hand, I forward it to one of my arrangers, and four weeks later we have the completed eighteen part arrangement ready to rehearse.
The key to getting what you want is to allow enough time for your special requests to be fulfilled. Whether it's a DJ looking for a rare recording, or a live music group seeking to create a unique arrangement of that special song, it still takes time.
